Garlic Naan

Nowadays we all are trying new dishes. With this pandemic taking over, our constant efforts are towards duplicating the dishes that we used to cherish in hotels and restaurants. So, adding onto this race, I recently tried my hands on making some Garlic Naan at home. Since it's not feasible to have a tandoor at home, so my focus was on having a recipe that doesn't need a tandoor. So here is my recipe for a perfect garlic naan at home. Without using oven, nor tandoor and not even yeast for fermentation. It's simple and tasty. So, read on.

Ingredients:
Two cups of All-purpose flour (Maida).
1/4th cup of boiled milk.
1/4th cup of heavy cream.
1/4th cup of sour curd.
1/4th cup of vegetable oil.
Half tablespoon of sugar.
Pinch of salt.
A cup of butter.
Half cup of chopped and peeled garlic.
Chopped coriander leaves.
Half teaspoon of baking powder.
Pinch of baking soda.
How to prepare:
Preparing garlic naan is very easy. The trick lies in the way it has to be cooked on the stove. So first we will start with preparing the dough. For the dough, take a bowl and sieve the flour into it. Add in sugar and salt as mentioned. One by one start adding the heavy cream, boiled milk, and curd in the given quantities. When all of this is added, make the dough. The dough needs to be soft. When the dough is ready, drip in some oil and tuck it multiple times. This will help us to get a softer texture in the dough. Keep the dough wrapped in a plastic bag/ wet cloth for an hour.
Post half an hour, take the dough out from the wrap and drip in 5-6 drops of oil. Make a hole in the center. Add in the chopped garlic and baking powder and baking soda in the mentioned quantities. With oily palms, take the dough and mix all these things together. Since the dough is already prepared, hence, in this step, extra efforts will be needed to mix in the garlic and the baking powder. You can add a spoon of curd to start the baking powder's reaction in the dough. (Note: Please don't add garlic, baking powder, and baking soda in step 1, that leads to stale taste and non-crunchy naans).
When this is done, wrap the dough in a new wrap and let it rest for 30-45 minutes. During this time, baking powder and soda will start reacting and hence you will see the dough increasing in size.
Once the 45 minutes pass, take the dough out from the wrap and again rub it with some drops of oil. The more the rubbing of the dough, the crunchier and tastier the Naan turns up to be.
Let us prepare the garlic butter till then. For the garlic butter, you will require melted butter, garlic, and coriander leaves. In a bowl, put in butter, add chopped garlic and chopped coriander leaves in it. Keep this in the oven for 3-4 minutes. Butter will start boiling. This will help the garlic to cook. Once done, our garlic butter is ready for the topping.
Now, let's start with rolling the Naans. Keep the griddle (Tawa) at high flame and let it heat up to max possible. Simply take a small ball of dough dip it in dry maida and roll it into a small Naan. Give it the shape as per your wish. Just keep the Naan slightly thick. When the Naan is ready, clean off the extra maida. On one side of the Naan, apply water. You can use a brush and apply the water. Now, take the Naan and with the waterside facing down. The water will help the Naan to stick on the Tawa. Using your fingers, carefully press the Naan on the tawa to make it stick completely.
Very soon you will see air bubbles rising up in the Naan, giving it the look of an actual tandoori roti. When this happens, take the Tawa and turn it entirely towards the flame. You don't need to take out the naan. The naan, that's sticking onto tawa has to be turned to the flame. While doing this, you will see that naan will start turning brown. This is an indication that it has cooked. Once it's cooked as per your wish, turn the Tawa back and scrape off the naan. Your naan is ready.
Top this Naan with some garlic butter that we made.
Hot, delicious, tasty, and simple Naan is ready to serve to your guests and family. Try this with some paneer gravy. I fell in love with the combination of this naan with my mom's special paneer gravy.
