Lentil French Toast

This is one of my favorite breakfast go to options. Until last week I had no clue that something like this could be made until one of my friends on Instagram posted this recipe. I tired my hands at it with few modifications and this turned out beautifully tasty and crispy!

Ingredients:

2 pieces of Multigrain Bread

1/4th a cup of Moong Daal

Few cloves of garlic

1/4th inch of ginger

2 green chillies

Spices to taste

Green leafy veggies like spinach, coriander, methi - chopped finely- around half a cup.

Pinch of Chaat Masala

Pinch of Hing

Half a cup of grated paneer/ tofu

Ghee to roast the bread





How to prepare:

  1. Soak moong daal in water for about 2-3 hours. Wash it off properly once soaked.

  2. In a mixer, add the soaked moong daal, garlic, ginger, chillies, hing and grind well.

  3. Once the paste is ready, take it out in a bowl, add salt to taste and add the finely chopped green veggies.

  4. Mix all well. Add this batter to one side of one multigrain bread. Repeat the same with other multigrain bread.

  5. Put this multigrain bread on a non stick tawa drizzled with some ghee and let it cook from both the sides.

  6. Once the mixture is properly cooked and the bread turns brown from other side, take it on a plate and add grated paneer on top.

  7. Once done, sprinkle some chaat masala and serve with ketchup.

On mornings when I wish to eat something spicy and crunchy, then this lentil french toast is my rescue. Due to paneer and moong daal, it is high in protein and low on carbs. Each bread is under 130 calories - which makes it a super healthy breakfast option.
