Mango Pie

Having a sugar craving in these troubling times is justified. We all are constantly working from home and having constant pangs of eating something sweet is explicable! So here is one of the recipes that I tried today using curd cheese (Chenna) and mangoes. Trust me, this is completely no sugar no fat recipe and you should try this surely if you have a sweet tooth but resist desserts thinking they are calorie bombs.

Ingredients:
A cup of Curd Cheese (Chenna).
2 Ripe Mangoes diced.
Dry Fruits such as almonds, cashews, and pistachio. 8-9 pieces of each would do.
Half teaspoon of Elaichi Powder (Cardamom Powder).
Half cup of jaggery powder.
Vanilla Essence.
How to prepare:
Take the curd cheese in a cotton cloth and tie it down. Hang it in a dry place for an hour. This will ensure that all the excess water in the curd cheese drips away.
Once done, the curd cheese will appear like a softball of Paneer. Take this curd cheese in a bowl. Add ground jaggery powder to it. Mix well. Roll it up around the bowl for 15-20 minutes. This shall ensure the proper mixing of jaggery with the curd cheese.
Post this, add cardamom powder, 2-3 drops of vanilla essence to it and mix well.
Partially ground the dry fruits in the grinder. Don't turn it into powder.
Once you see that the curd cheese is mixed decently well with all the ingredients, add the ground dry fruits it. These dry fruits shall give a crunchy taste.
Now is the time to set up our bowl. Take a round glass bowl and place a butter paper at the bottom. If you don't have butter paper, take an A4 paper, cut it into the size of the bowl, place it at the bottom of the bowl and rub some butter on top of it.
On top of butter paper, spread the first layer of diced mangoes. Place it evenly.
Once the slice of mangoes is done, take the curd cheese mix in hand, roll it into a ball and then dab it with soft hands to form thin layer of curd cheese.
Place this curd cheese layer on top of the layer of mangoes and dab it to form an even layer.
Once done, take the remaining diced mangoes and spread it evenly as a layer.
With firm hands, press the layer a bit so that the pie can set in.
Keep this bowl in the refrigerator for 4-5 hours and medium cool to ensure the proper setting and awesome taste.
Post 4-5 hours, the mango pie is ready for serving. Using a sharp knife, cut it into triangles to serve. You may garnish it with some pistachio strings.
An experiment possible here is with some pomegranate seeds and other similarly mildly sweet fruits. You can add multiple layers of fruits between each layer of the curd cheese mix to make it tastier, filling, and appealing!
