Oats and Sprouts Paniyaram

Ingredients:

For the paniyaram:

Half cup rolled plain oats

Half cup moong and chana sprouts

A cup mix of grated carrots, chopped capsicum, chopped onion, peas, and some spinach leaves.

Chopped paneer pieces

Oil for brushing

Seasonings like salt, jeera seeds, ajwain seeds and chilly powder


For the chutney:

3 tomatoes finely chopped

3 onions finely chopped

10-15 garlic bulbs

3-4 dried red chilies or 1-2 green chillies

5-10 curry leaves

Oil for roasting

Sarso seeds for tadka


How to prepare?

  1. For this dish, first, take some rolled oats and roast them on medium flame. Once roasted, let it cool down and then grind it into a fine powder. Now add the roasted oats powder into a bowl.

  2. Take some sprouts and grind it too in a mixer and add some water and besan to it. Let it turn totally smooth. Add the sprouts paste to roasted oats.

  3. For the veggies, take a pan and add the veggies of your choice to it. I took some spinach leaves, peas, carrots, capsicum, and onion. Roast all of it on medium flame and once done, let it cool down. Now turn these veggies into a smooth paste by grinding it in the mixer. Once done, add this paste also to the oats mixture.

  4. Mix everything together and add the seasonings. Add some salt, some oregano, some jeera seeds, and some ajwain seeds. Now add the paneer pieces and mix well. Make sure that the paneer does not crumble out.

  5. Take the paniyaram pan, brush it with oil, let it heat up, and then add the mixture in each section one by one. Cover it up and let it cook. Turn it over and let it cook again. Your paniyaram should be ready in 3-4 minutes of cooking.

  6. To cook the chutney, in a pan, take some oil and let it heat up. To this, add the chopped tomatoes, chopped onion, curry leaves, garlic, and chilies. Add the salt and let all of this cook till everything is mushy and soggy.

  7. Once everything is cooked, cool down the mixture. Once cooled, grind the chutney and then take out the entire chutney in a bowl. Add the tadka or sarso seeds and curry leaves to it.

Tada! Your wholesome, no-carb, high fiber, and high protein meal of oats and sprouts paniyaram is ready! This turns out to be my comfort food as I love it in winter, sitting in my garden and eating these hot paniyarams under the sun! Enjoy people!
