Vagaru Pulao

I am a fan of eating rice but due to my uncertain medical conditions, it was years back from now when a dietician suggested to me a no rice meal and since then, I have been completely off from eating rice. But, being a foodie, it's not easy to resist eating rice. So I searched for my own healthy and no-calorie ways of cooking and eating dishes made of this white cereal when, I came across millets, which are a good substitute. These are healthy, tasty as well as easy and quick to cook. Read on to explore one of the tasty and filling substitutes to rice pulao, called vagaru pulao.

Ingredients:
Two cups of Kodu Millet (called as Kodon too, its a form of millet which is white and round in shape)
A cup each of diced carrots, beans, capsicum, tomato, onions.
Half cup mix of boiled sweet corn kernels and green peas.
2-3 chopped chillies.
A Teaspoon each of crushed ginger and garlic.
A Teaspoon of oil.
Half teaspoon of Cumin Seeds and fennel seeds.
A half-inch of cinnamon stick.
Half teaspoon of oregano mix, lemon juice and chilli flakes.
Condiments and spices like red chilly powder, salt, sugar and black pepper powder.
How to prepare:
To prepare this pulao, first, pour the Kodu in a bowl and add in two-three bowls of drinking water into it. Let it soak for 20-25 minutes.
Till then, prepare the rest of the things for the pulao. In a saucepan, put in the oil and let it warm. Once it warms up good, add the cumin seeds and fennel seeds to it.
Let the seeds flutter, add the cinnamon sticks into it and once the aroma rises, slower down the flame.
Add in oregano mix, chilli flakes to it. Stir it to cook and let it turn brown.
Within the next 10 seconds, add in the ginger-garlic paste and stir it well to cook.
Let it turn brown. Once cooked, add in the diced onions to it. Let it turn brown to cook.
Once these initial things are ready, add in all the diced vegetables. Sprinkle some water, and sprinkle the salt into it. Cover it to let it cook in the steam.
Parboil the vegetables- they should be not completely boiled, just crunchy enough to not lose the taste.
Simultaneously, drain out the water from Kodu and keep it ready.
Put the Kodu in the saucepan with vegetables, mix well, add lemon juice to it. Add 5-6 cups of drinking water to it. Mix the vegetables well with Kodu and let this boil. You may cover it.
Once the Kodu is steamed, it will start fluffing up and turning soft.
Take a spoon and check the fluffiness. Fluffier the Kodu means it's ready to be served.
Before serving, sprinkle black pepper powder and mix it with light hands.
Serve this Kodu steaming hot and garnish it with chopped coriander leaves. This is one of the healthier delicacy called as Vagaru Pulao.
Try this meal as a breakfast option or even as a full-fledged meal option. It's filling and healthy and as you can see it, very easy and quick to cook.
