Vanilla Nutty Cupcakes

Want to surprise the young ones with something interesting? Or want to make some quick yet handy desserts? These are my best homemade picks- Vanilla Nutty Cupcakes. Afterall someone rightly said, Dream as if you will live forever and eat cupcakes as if you will die today! So read on to make these really simple, eggless, quick, and tasty cupcakes which will be a delight to your young babies!


Ingredients:

(Note: All at room temperature)

1 cup Curd.

1 cup Sugar. (granulated or powdered, both work fine)

1 Teaspoon Baking Powder.

1/2 Teaspoon Baking Soda.

1.5 cups All-Purpose Flour- 1.5 cups. (If you have self-rising flour, then you can skip the baking powder and baking soda)

1 Cup Edible No smell Oil/ Unsalted Butter/ Ghee/ Cream.

5-6 drops Vanilla Essence.

1 cup Mix of cut Dry Fruits.

Cupcakes Mould.

Cupcakes Liners- depending on how many you wish to make. I took mould with 6 cups.


How to prepare:

  1. First, take the sugar and curd in a bowl and beat them well together for 5 minutes. Once the sugar is properly mixed with curd, add baking powder and baking soda. Stir all together for 30 seconds and leave it aside for 5 minutes.

  2. After 5 minutes, you shall see bubbles rising up in the curd. This depicts the start of the reaction between curd and baking soda.

  3. Once you see the bubbles coming up, add vanilla essence to it and mix well for another 2 minutes.

  4. Add the edible oil/ butter/ ghee/cream that you have. Make sure the oil that you use has no smell in it or else it may give a bland taste to the cake. Mix for another 10 minutes.

  5. Sieve the flour in a bowl. Add this flour to the curd mix and give a generous mix for another 5 minutes.

  6. Once all of this is done, check for consistency. Take the ladle and try dropping the mix in the bowl. If it easily falls, then it's done. If not, you can add some milk to it. At this point, you can add the dry fruits in the batter.

  7. The batter is ready. Take the cupcake mould and line it with the cupcake liners.

  8. Preheat the oven.

  9. Pour the batter in the liners carefully. Tap the mould to release the air bubbles.

  10. Decorate these cupcakes with dry fruits.

  11. Put the mould in the preheated oven at convection mode in 180 degrees for good 40 minutes.

  12. Once 40 minutes are done, dip a toothpick in one of the cupcakes. If it comes out clean, it means you have your perfectly baked vanilla eggless cupcakes ready! If the batter sticks to the toothpick, give it another 20 minutes run in the oven and it should be done.

These are the best, easiest as well as healthiest cupcakes. If you feel, you can replace sugar with jaggery and all-purpose flour with wheat flour to make it healthier. (Though the taste may be bit different). Try it and do let me know how the kids find it.
