Vanilla Tea Cake (Eggless)

When its a Dessert time, one of the easiest and the tastiest recipes that I resort to is baking some Vanilla Tea Cake! Since my family prefers to go for an eggless version of it, hence I came up with this instant, easy, and tasty recipe which you can make without much hassle. Ingredients mentioned here, are easy to find in any home.


Ingredients:

(Note: All at room temperature)

A cup of curd.

A cup of sugar. (granulated or powdered, both work fine)

A teaspoon of baking powder.

Half teaspoon of baking soda.

1.5 cups all-purpose flour (If you have self-rising flour, then you can skip the baking powder and baking soda)

A cup of edible no smell or unsalted butter or ghee or fresh cream.

5-6 drops of vanilla essence.

A cup mix of cut dry fruits. (optional)


How to prepare:

  1. First, take the sugar and curd in a bowl and beat them well together for 5 minutes. Once the sugar is properly mixed with curd, add baking powder and baking soda. Stir all together for 30 seconds and leave it aside for 5 minutes.

  2. After 5 minutes, you shall see bubbles rising up in the curd. This depicts the start of the reaction between curd and baking soda.

  3. Once you see the bubbles coming up, add vanilla essence to it and mix well for another 2 minutes.

  4. Add the edible oil/ butter/ ghee/cream that you have. Make sure the oil that you use has no smell in it or else it may give a bland taste to the cake. Mix for another 10 minutes.

  5. Sieve the flour in a bowl. Add this flour to the curd mix and give a generous mix for another 5 minutes.

  6. Once all of this is done, check for consistency. Take the ladle and try dropping the mix in the bowl. If it easily falls, then it's done. If not, you can add some milk to it. At this point, you can add the dry fruits in the batter.

  7. The batter is ready. Take a baking tin. Grease it with butter.

  8. Preheat the oven.

  9. Pour the batter in the baking tin and put the tin in the preheated oven at convection mode in 180 degrees for good 40 minutes.

  10. Once 40 minutes are done, dip a toothpick in the cake. If it comes out clean, it means you have your perfectly baked vanilla eggless cake ready! If the batter sticks to the toothpick, give it another 20 minutes run in the oven and it should be done.

Enjoy this Eggless Vanilla Teacake with warm milk or some chai. You can serve it hot with some vanilla ice cream or warm chocolate syrup too. I like to eat it when it just out from the oven and the baking's aroma has taken over the entire house!
